Pear and mixed berry crumble recipe

I made this pear and berry crumble a while ago now and so far it’s been a big hit so I thought I would let you know how I made it. It’s a slimming world recipe. I am not on slimming world so I tweaked it, I just like to make healthier foods if I can.

What you will need:

  • 500g of peeled, cored and thickly sliced pears
  • 300g of frozen berries although it also suggests you can use fresh instead
  • 50g of plain porridge oats
  • 25g flora light margarine
  • 1 level teaspoon of sugar (or sweetener if preferred)
  • 1 zest of orange
  • 1 teaspoon of vanilla extract
  • 1 teaspoon ground cinnamon

Method:

  1. First preheat the oven to 180C or gas mark 4
  2. Place the oats, sugar and flora into a bowl
  3. Rub them all together with your fingertips until it’s is all combined together
  4. Next, simmer the pears in hot water for 5 minutes or until tender
  5. Drain the pears and mix the pears, berries, orange zest, cinnamon and vanilla extract together
  6. Pour the mixture into a medium size baking dish and sprinkle over the oat mixture
  7. Place in the oven and bake for about 30 minutes or until the top looks golden brown
  8. Serve and enjoy!
